Pianoforte meaning 'soft and loud' is a French style cheese made from pasteurized cow's milk produced locally at Andante Dairy, Petaluma, California, US. It is aged for a minimum of three weeks during which the flavour becomes quite strong, nutty and mushroomy while outer pate becomes creamy and molten. The fully-aged cheese is soft in texture with runny pate. Pianoforte pairs well with red Burgundy or Pinot Noir.
