Wagon Wheel is a hard cheese made from organic pasteurised cow's milk, produced by Cowgirl Creamery, based in Marin County, California, United States. Cream and microbial rennet is added to the milk, and is aged for a minimum of 75 days. During ageing, it develops a rind that envelopes a supple, meltable paste with a slightly springy texture. The flavour varies from delicate to nutty, with notes of brown butter and cream. Wagon Wheel is a great addition to the kitchen as well as a cheeseboard.
