Havilah is an Alpine-style cheese that captures the essence of central New Jersey's summer pastures filled with wildflowers and clover. Produced by Cherry Grove Farm in New Jersey, USA, Havilah is exclusively made from May to October, coinciding with the grass season. This cow's milk cheese is aged for 8 to 15 months. It can be aged even longer, reaching 16-24 months, resulting in a full-flavoured variation known as Havilah Reserve.
The cheese goes well with sweet cider, dry sherry, or Amarone.
