MouCo Camembert is a soft, surface-ripened cheese made using pasteurized cow's milk made by the MouCo Cheese Company in Fort Collins, Colorado, US. MouCo Camembert is aged between 7 to 8 weeks. During ageing, the young cheese is kept on a rack or drying and then moved to the cave for maturation. A fully matured cheese develops buttery creaminess with a hint of tartness.
