MouCo Camembert is a soft, surface ripened cheese made using pasteurized whole cow's milk, made by the MouCo Cheese Company in Fort Collins, Colorado, US. MouCo Camembert is aged between 7 to 8 weeks, during ageing, the young cheeses are kept on racks and dried, then moved to the cave for further maturation. A fully matured cheese has a bloomy white rind with oozing soft paste. The smooth textured cheese has a clean, milky flavour with hints of caramel and grass.
