Cirrus is a Camembert-style cheese but smaller and creamier than the classic Normandy version. It is ripened for four weeks during which it develops an ivory-coloured soft, fudge-like texture with a bloomy white rind. It has a nutty, buttery flavour with distinct flavours of cream and salt and aromas of mushrooms.
