Shepsog is a mixed milk cheese made by the Grafton Cooperative Cheese Company in Vermont. High-quality sheep's and cow's milk is used to make a stunning wheel of cheese, which is then aged in Grafton’s caves for a minimum of five months. This cheese is available only in fall and winter.
Complex and earthy, Shepsog develops a butter-yellow semi-firm paste during its ripening period encased by a velvety rind of white and grey moulds. Its flavour is rich and round, with a nutty and sweet finish. The cheese pairs well with a Syrah.
This celebrated cheese has won many international awards including Super gold at the 2014 World Cheese Awards. It has been judged as one of the world's 62 best cheeses.
