Modern, farmhouse, organic, blue cheese made from sheep's milk. It is a cylindrical shape cheese. The sticky, moist natural rind has occasional blotches of natural yeast and moulds. Bergere Bleue is cheese with a rich aroma of lanolin and yeast. It melts in the mouth like butter, releasing the flavor of burnt caramel. The blue-green streaks of Penicillin Roquefort give a spicy piquancy to the pale lemon-colored cheese, which is moist and slightly crumbly. The more mature cheese is spreadable.
