Nocturne is a delicate cheese made from pasteurized cow's milk produced locally at Andante Dairy, Petaluma, California, US. This pyramid shape cheese with flat top has a bloomy white rind rolled in gray ash with the hints of dirt, mashroom. Nocturne has a moist and velvety exterior and firm interior. When young it is less firm and becomes creamy and soft as it ages. The cheese goes well with almost all wines.
