Shepherd's Hope is a mild, fresh cheese based on a traditional queso fresco recipe. Made from pasteurized sheep's milk, it has a soft yet slightly firmer texture with light, milky flavours accompanied by gentle citrus note at the finish. It has a shelf life of only eight to ten weeks after production. The cheese is available in either plain or garlic & herb versions. Enjoy the cheese with a crisp Chardonnay and a fresh baguette or in a tomato basil salad.
Shepherd's Hope has won many awards; the most notable one was at the 2012 American Cheese Society.
