Capricious is a mold-ripened, artisan cheese made using goat's milk, made by the Achadinha Cheese Company in Petaluma, California. Aged from 8 to 12 months, during aging the cheese is hand rubbed with olive oil. This granular textured cheese has nutty, caramel flavour.
Capricious is perfect for cheese board and can be grated on salad, pasta, risotto, fruits. Try pairing it with full bodied reds, dry whites, Champagne.
