Ridgeline

Ridgeline is an American original, red rind cheese with a very thin layer of ash passing through the centre of the wheel. At about 4 weeks, this cow's milk cheese is rubbed with olive oil and paprika to impart its mild flavour, nutty, caramel quality and gorgeous colour. The wheels arrive in the market only when they are aged for at least another month.
