Lincoln Log cheese is a soft-ripened goat cheese from Zingerman's Creamery, located in the town of Ann Arbor, Michigan, United States. Inspired by the French Bucheron, the cheese has a dense, smooth texture with a mild flavour that offers clean citrusy notes with just a slight hint of mushroom at the finish. As it ages, Lincoln Log becomes firmer and acquires a fudge-like creamy consistency. A bloomy rind cheese, it is 4 inches in diameter and aged for two weeks.
