Westfield Farm Smoked Capri

Produced by Westfield Farm in central Massachusetts, Smoked Capri is a plump log of goat's cheese smoked over hickory for about 14 hours. This lends the lactic, milky paste a distinctive sharp, hickory flavour that makes it a truly unique goat cheese. Technically, it is low fat cheese due to the high moisture content though no specific process takes place and the pate preserves its smooth and creamy consistency. It could be used as a substitute for cream cheese, baked into a casserole or melted into a cream sauce.
