Truffello

Truffello is a soft, surface-ripened cheese made using pasteurized whole cow's milk, made by the MouCo Cheese Company in Fort Collins, Colorado, US. This delightful cheese with black truffle flavour is aged between 3 to 4 weeks, that develops white and bloomy rind with ivory paste. When young the cheese is soft and creamy with truffle flavour. As it ages the texture becomes luscious while the flavour becomes more earthy and intense.
