Pecorino Ginepro is an Italian cheese made with highly selected sheep's milk pasteurized at optimum temperature. It is covered with juniper berries and bathed in balsamic vinegar, and then left for maturation in oak barrels. The unique maturation process gives the cheese a dark reddish-brown rind, grainy texture that is a little chalky and white. The full-flavoured cheese has a fruity, woodsy aroma and hints of juniper.
