Produced by Romaniae Terrae, Pecorino Foglie Noci is an Italian cheese made with highly selected sheep's milk pasteurized at optimum temperature. Cheese wheels are first rubbed with virgin olive oil, covered with walnut leaves and left to mature in huge wooden basins. Later, they are matured in terra cotta jars in a natural environment.

The unique maturation process gives the cheese a white crumbly and grainy texture, soft mouthfeel, sheepy flavour and an aftertaste of walnut leaves.
