Cilentano ai fichi is one of the most ancient types of cheese made by a Casa Madaio dairy farm in Cilento, Campania, Italy. Mixture of sheep, cow and buffalo milk is used to make the cheese, which is then covered with figs and dried on bamboo racks with natural ventilation. The cheese has a milky aroma infused with a mild buttery flavour and a hint of figs.
