Asiago d'Allevo DOP (Asiago D’Allevo DOP Mitica® or Asiago Aged) is a cheese produced from partially skimmed cow's milk in the provinces of Vicenza, Trento, Padova and Treviso. Asiago d’Allevo and Asiago Pressato are the two main types of which d'Allevo is more traditional. The flavour of the cheese varies according to the ageing period.

When it is sold as "Mezzano" (medium-aged) at the age of four to six months, the flavour is pleasant and yeasty with a compact texture. The flavour becomes more savoury after ageing for five months.
