Five Counties (Five Territories) is a cheese produced by Ilchester Cheese Company. The cheese is made by combining five English kinds of cheese namely, Cheddar, Cheshire, Derby, Double Gloucester and Red Leicester. The alternating layers of yellow, orange and white makes this cheese visually stunning on a cheese platter. Since all five kinds of cheese are either Cheddar or close to Cheddar, the resulting cheese is mild and buttery in taste, smooth in texture with hints of salt. Five Counties can be used as toppings for burgers, salads. It goes well with dark beers, fruity wines.

Saxon Shire or Saxon Shires: A similar layered cheese is marketed by Coombe Castle International.
