St Jude is a lactic style cheese made by Julie Cheyney at Fen Farm Dairy in Suffolk from unpasteurized cow's milk. It is a soft cheese with a smooth paste and a fluffy mousse texture. The flavours are fresh, rich buttery and savoury. The cheese comes with a wrinkled and very thin mould ripened rind. It is usually eaten between 2-5 weeks.
