Bootlegger is hard, aged cheese made from a blend of sheep and cow's milk. It is aged in Valcasotto cellars of Piemonte for two years. During the second year the cheese is coated in barley malt and whiskey or grappa infused fruit. This is a full-flavoured cheese with a strong floral influence and ideally should be served with whiskey and other distilled spirits.
