Produced by Romaniae Terrae, Pecorino a Latte Crudo is an Italian cheese made with raw sheep's milk. The cheese is salted and dried in a cold room at 6° - 8°C. Later, it is treated with olive oil and kept in a cold room at 8°C for about 60 days.
This is a straw-coloured cheese with a silky mouthfeel, slightly piquant taste and an intense scent and flavour.
