Produced by Romaniae Terrae, Pecorino Querciaiolo is an Italian cheese made with highly selected sheep's milk pasteurized at optimum temperature. It is covered with oak sawdust and then left to mature in virgin fir crates for over 60 days.
This is a smooth white cheese with a strong aroma of sheep's milk. The unique maturation process makes it silky and delicate to the palate.
