»  La Taupiniere  «


Dome-shaped cheese, similar to Gaperon, made from goat's milk. The name of the cheese means "molehill" which describes this unusual shape. It is produced by M. Jousseaumme at his farm at St. Estephe in the province of Angoumois. La Taupiniere is nutty, with a fresh lemony tang. During the two-week period affinage the cheese absorbs natural mould in the cellar, which gives it a good flavor. The content of fat is about 45 per cent.
