Patefine Fort

Patefine is a cow’s milk cheese produced by Saint-Georges-d'Esperanche in the department of Isere, France. It is a soft cheese with animal rennet. During preparation, salt, spices, pepper and white wines are added. The cheese is slightly sour, and goes well with Chianti.
