Tomme de Romans is a French cheese that used to be made from goat's milk, but now it is almost exclusively industriel or artisanal, made from pasteurised cow's milk. This cheese is sold in wooden trays lined with straw. Tomme de Romans has a slightly sour, grassy flavour with a delicate, nutty finish. It smells slightly of cellar in which it is matured. The maturation period is at least 10 days. And the fat content is 45-50%.
