Tomme Brulee

Tomme is a prefix attached to the cheese produced in the Savoy Mountain region of France. This cheese is produced in the Basque region. Tomme Brulee is made from unpasteurized sheep's milk. The rind is singed with a flame so that it acquires a distinct appearance and a strong, sweet and smoky flavor. It has a firm texture with a pungent aroma. This cheese is best complemented by a Malbec or a Cabernet Sauvignon.
