Galette du Paludier

Galette du Paludier is a cheese created from an original idea of maturing a goat's cheese in a different way. A locally produced goat's cheese is ripened on a bed of Salicorne. The Salicorne is an aquatic plant that grows only in the shallow, salty waters that one finds at Noirmoutier or Guérande. This ripening process gives the cheese an original and exciting taste.
