This heart-shaped cheese is made from raw goat's milk. The herds roam and feed on the rich grasses of the Gātinais. The color of this cheese ranges from pure white to white, sprinkled with a soft blue mould. The texture of the pāte is smooth, the taste is light with no sourness. The Coeur de Chčvre is wrapped in a chestnut leaf.
