French cheese of rectangular shape made from cow's milk. This cheese is only produced by the farmers in the Averyron region of France. It matures in freshly ground, wood ashes. The taste is characteristic of the arid land and tender fruits of the south of France. The period of ripening is about three weeks and it tastes delicious with a glass of red wine.
