In 1850 Antoine Roussel lived in Laqueuille, a small charming village in Auvergne. Roussel created this elegant cheese, finding inspiration from the blue d'Auvergne. It usually has a shape of cylinder with natural, pale orange rind. The pāte has a slight smell of the cellar and tastes of blue mould. It has a spicy, fresh and creamy flavor. The period of ripening is about three months and the content of fat is 45 per cent.
