Originating from the village of Chavignol, in the Centre Val de Loire region of France, Crottin de Chavignol is a goat milk cheese with AOC (Appellation d'Origine Contrôlée) status. This designation requires the cheese to be produced in the Chavignol area and adhere to specific traditional production methods.

Made from 100% raw milk of Alpine goats, this small, cylindrical cheese features a unique, wrinkled rind that develops a blueish tint with age. When young (Chavignol jeune), the interior is dense and smooth, offering a mild flavour with subtle nutty notes. As it matures into the fully aged (Chavignol affiné) version, the cheese develops a firmer, crumbly texture and a more robust, goaty taste.

Crottin de Chavignol can be sliced into salads or incorporated into various hot and cold dishes. It complements white wines, especially those hailing from the Sancerre region.
