Tyning

Tyning is an artisan cheese made by the British cheesemaker Mary Holbrook. It is a hard cheese made from unpasteurized sheep's milk. The shape is that of a basket with a brittle and dense texture. It has a fruity, nutty and acidic flavor. The aging for the cheese ranges from anywhere between three to twelve months. This cheese is best paired with a white wine.
