It is a hard, almost brittle and slightly oily cheese made from sheep's milk. The cheese has a shape reminding a flying saucer. It is fruity and spicy and full of contrasting flavors. When young, it has a burnt-caramel sweetness with fresh, pineapple tang. This cheese is made by Mary Holbrook of Sleight Farm. The period of maturing is about three to twelve months. Tyning is considered the best modern British cheese.
