Goat Nevat or simply Nevat (Nevat means snowed in Catalan) is produced in the Barcelona region of Spain. It is a soft-ripened cheese made by Mr. Joseph Cuixart using pasteurised goat’s milk. It is treated with a penicillium mould, which forms a bloomy white rind.  The ageing period is about 60-90 days, and a completely matured cheese develops a soft, delicate texture and sweet flavour.
