Canarejal is known in Spain as a ‘torta’ and is made with ewe’s milk from the Santos family in the Extremadura grasslands. With a beautiful aroma and stunning soft centre, Canarejal is like cheese’s equivalent of the chocolate bomb. Almost Vacherin Mont d’Or like in texture, in can be spooned out of the rind like a dessert. Gorgeous and silky.
