Auld Reekie, a hard cheese, is made from unpasteurized cow's milk at the Cambus O'May Cheese Company in the eastern Cairngorm mountains of Scotland. Following an ancestral family recipe, the cheese undergoes smoking through traditional methods. In the smokehouse, it is smoked over whisky barrel shavings, imparting oaky, smoky notes with a hint of whisky and concluding with a tangy finish.
