Modern, farmhouse, unpasteurized, vegetarian, soft-white cheese made from goat's milk. It has a round shape with very thin, velvety, penicillin rind dusted with a fine layer of ash. The cheese has unexpectedly firm, breakable texture. It melts in the mouth like fudge, yielding up its sweet, nutty flavors with just a suggestion of goat's milk. It matures in three to four weeks and has a fat content of 45 per cent. Sometimes, this cheese is called "Bosworth Leaf" because of the chestnut leaf wrapping that contrasts beautifully with the fluffy, white rind of grained texture that softens to a velvety smoothness. The taste is reminiscent of vanilla and butterscotch, with a subtle but distinct, almost almond finish.
