What is Elrick Log?

Elrick Log, made by Selina Cairns in Lanarkshire, Scotland, is an ash-coated, unpasteurized goat's milk cheese log. Using vegetarian rennet, this cheese undergoes yeast ripening, causing it to soften progressively from the outside when left to mature for an extended period. Typically aged for around two weeks, Elrick Log develops into an ice-cream-like texture, with citric and fresh flavours. The rind gains a subtle spiciness as it ripens.
