Tala is an English cheese that comes from Cornwall. It is an unpasteurized, vegetarian cheese. According to its texture, it ranks among hard cheeses. Although firm, Tala melts in the mouth. It has the sweet, aromatic, burnt-caramel taste and suggestion of lanolin and aromatic rosemary that is so typical of sheep's milk. The affinage usually takes five months and the fat content is 48%. The cheese was created by Hans and Heather White and is a past bronze medal winner at the British Cheese Awards.
