Bitto della Valtellina
A rare cheese made from mixture of cow’s milk and goat’s milk. It is matured for almost one year. Bitto cheese is made in unique technique under alpine pastures and amount of cheese produced is less per year. Blend of un pasteurised of 90% cow's milk and 10% goat's milk is used to make cheese that is matured for almost 1 year in skilled manner. The main area where it is produced is very high at mountains in Valtellina region. It is tangy in flavour, natural and sweet in aromatic rich cheese. It is best with walnuts, wine and also in polenta and risotto.
