A Cheese made from sheep’s milk, by a renowned producer II Forteto; matured traditionally for 5 months & later under the ash for another three months produces a unique taste & aroma. For aging it is kept under thick layer of ash that helps to increase the speed of the process makes it more sweet and tastier pecorino cheese. In ripening process, ash helps to absorb moisture that removes acidity of cheese and on the rind prevents formation of mold. It is rich, versatile, flavourful and semi-hard cheese. It is ideal for desserts with honey and Balsamic. It can also used for grating or served sliced.
