Bianco Sottobosco is from the Cuneo of Piedmont. It is made from pasteurised cow's milk and goat's milk. It contains earthy flavour and in texture little dry. This rare cheese is aged for six weeks underground in caves and especially handmade. These caves walls are of porous rock, i.e. Tufo. It is rich, tasty, fresh and hard cheese. It tastes great with a glass of Barolo before meal. This cheese can attract many cheese lovers but not so famous outside of its local area.
