Bianco Sardo di Moliterno
Bianco Sardo is also known as Canestrato, when it is matured. It is produced in Puglia, Italy. Sheep's milk is used for making this hard cheese. Bianco Sardo is made only from the milk of Apulian. The curds are pressed in Apulian reed baskets to squeeze out the whey. This gives a special flavour and taste to the cheese. The outer part of cheese looks beautiful. Its paste is thick or powdery with sweet and tangy taste. It is consumed with Nero d'Avola or Muscat.
