Tasmania Highland Chevre Log is a fresh farmhouse cheese in Australia, made from goat's milk. Two versions of this cheese are available, plain and ash-covered. The cheese is moist with a cheesecake texture. It has a fresh, lemony flavour. The aging process can take from one to three weeks. It is a table cheese but also ideal for grilling. It is best paired with champagne or a stately Riesling. The fat content in the cheese amounts to around 35%.
