Produced by Romaniae Terrae, Pecorino Canapa is an Italian cheese made with highly selected sheep's milk, pasteurized at optimum temperature. It is a white, smooth cheese that is likely to crack with maturation. The cheese wheels are covered with hemp leaves and then left to mature in virgin fir crates for over 60 days. This unique maturation process gives the cheese a unique scent and flavour and also maintains its softness.
