Tome from Laura Chenel is a cheese in the shape of the wheel is made from pasteurized goat's milk in Sonoma, California. This hand-crafted cheese is wrapped in a cheese cloth to form a shape of the wheel and allowed to age for about 8 to 12 months. Tome has a firm, dense texture, pale yellow paste with savoury flavour. It pairs well with a California Pinot Noir from Carneros.
