Fresh Jack is Monterey Jack cheese made from whole or skimmed milk and aged for only a week. This creamy, semi-soft cheese is made from cow's milk. The high moisture content and freshness of the cheese tastes wonderful with sandwiches and cooked dishes. Fresh Jack is very similar to Edam in texture, but it is creamier and more springy. It is used as a table cheese in salads and also for melting.
