Carlow is an Irish cheese produced by Elizabeth Bradley at Fenagh in County Carlow using raw cow's milk. It is an Edam-style cheese with a smooth golden yellow, semi-firm pate coated with a clear wax rind. The flavour is mild and delicate with buttery undertones. It is also available in a number of flavoured varieties such as basil and dried tomatoes, black pepper, cumin, chilli, garlic and herb, and nettle and onion.
