Sage Derby is a vegetarian cheese made from cow's milk. In the seventeenth century, the custom of adding sage (a herb valued at the time for its health-giving properties) to Derby cheese was begun. These days, the cheese consists of reconstituted cheese blended with spinach juice or green vegetable dye and colourless dried sage. The maturation period lasts from one to three months and the fat content is 45%.
